It will certainly stick to ceramic, how effective it will be will depend on the amount of surface contact you can achieve. If your tiles are not even you may find you cannot get enough of the splashback to remain in contact with the wall.
Can this be used to stick a splashback ro the side of a kitchen cupboard??: Yes this will be fine to stick the splashback.
